IT ALL STARTED WITH KIM.
Kim didn't just like matcha.
She became completely obsessed with it.
If there was a new café to try, we'd make the trip. If she'd found a recipe online, she'd wake me up at 1am so we could try making it ourselves.
Matcha slowly became part of our everyday life.
Despite trying so many different matcha, we still couldn't find one we'd genuinely look forward to drinking every day.
So instead of waiting for someone else to make it...
We decided to build it ourselves.
THE SEARCH BEGAN.
We started ordering samples from Japan and tasting them side by side.
Some were too bitter. Others disappeared completely once milk was added. Some looked incredible online, but were disappointing once they were actually in the cup.
Along the way, we spent months speaking directly with the people growing and milling our matcha, learning how different cultivars, harvests and milling methods changed the final cup.
We weren't looking for the most expensive matcha.
We were looking for the one we'd genuinely reach for every single morning.
After months of tasting, learning and refining... we finally found it.
WE KNEW STRAIGHT AWAY.
We'd tasted so many samples that we almost convinced ourselves we were being too picky.
Then we made one more latte.
It was smooth enough to drink every day, but still tasted unmistakably like proper matcha.
It held its own in milk, worked beautifully hot or iced, and made us want another cup as soon as we'd finished the first.
This wasn't just another sample.
It was the matcha we'd been searching for.
